Of course, SAP serves as a poor system of record for e-mail addresses. Most large enterprises use a directory (e.g., Active Directory, E-directory, etc.). So, the solution is often to allow maintenance in the directory and simply use LDAP synchronization to load the e-mail address into the User Master record's communication record.
This is further complicated by the fact that the e-mail address in the User Master record is not the only one. HR maintains a separate e-mail address in the PA0105 table, and there are others. So, yes, SU01 will allow maintenance of some of a person's e-mail addresses; but, they aren't all accessible from there.
In our environment, we use LDAP sync to load the CUA central system, push the e-mail to the user master record, then follow that with an HR and SLCM custom synchronization program that loads the PA0105 and appropriately propagates to the central person for SLCM.
