Hi Christy,
You will need to delimit IT0001 (Org Assignment). However, since IT0001 is having time constraint 1, you will have to create a new entry. Typically, you can copy the latest record with the new position as SAP Default Position. This will create a 'vacancy' for the position that the employee was assigned to.
In addition, you also need to delimit payment related infotypes (e.g. IT8, IT14, etc) so that you will not accidentally pay the employee in future payroll run.
Hope you find this helpful.
Rgds,
CL
