The PO Output (via print, email, fax, EDI, etc.) is nearly always customized. Many SAP customers start with SAP delivered forms and adjust them to their needs. (As a minimum, nearly all include their logo.)
Those customizations can include or suppress any field. So to exclude Item Text from the print or send, have the development updated to exclude it.
Alternatively, there are texts which are intended for internal use, and do not go on the PO Output (unless added by customization). If the information that is now in the Item Text was in one of these internal texts, it would not be output.
What is the information you are looking to stop sending? Is it coming from the Material Master? If you move it there, it would move on where it is in the PO.
