Have you tried a transaction variant attached to the Tcode? Disabling some fields will work this way, some will not. For instance, I could not get the Delivery Priority field to gray out with this method, but was able to hide ship-to address fields with no problem.

I used the exit "userexit_field_modification" of the include "MV45AFZZ". But it seems to be not working.
