Hi Christy,
You will need to maintain infogroup for all personnel actions, including hiring action. You can include contract element in your hiring action so that whenever user execute the hiring action, the contract element will be activated. This can be done using table V_T588D.
For your question on how to know whether an employee is on probation, this can be identified from the date of hiring (i.e. the hiring action date). I believe your question here is more of coming from system perspective. This is be achieved using IT0019 (Monitoring of Tasks). You can include this infotype in your hiring action so that this info will be captured during the hiring.
