System refreshes are very helpful for functional consultants to ensure that the are working on the latest data from Production.

For example, if you are implementing a new functionality, you would want to work against some "test data". You can either generate the "test data" on a non-production system, or you can work with existing data from Production to make it even easier for you. Using the data from Production will ensure that you would work on "real life" data which otherwise you would not easily be able to generate from a test system.

Of course, there are also some wicked issues that happens only based on very specific combination of things. If you are working on the data from Production, then you can easily debug on a test system what may have led to this wicked issue, and accordingly, come up with a fix for it.
