Is there a way to prevent the 'Sold To' information from printing on the DN. Only displaying our company of course and the 'Ship To' party?

You can use TAF and TAS item category.
It will create a PO from sales order.
You have to ask to your third party to display your logo in packing slip.
Concerning, the merge many ERP in one, I have some experience on it with a specific tool, if needed I can help you.
