Barbara,
You can use the USEREXIT_SALESDOCUMENT_PREPARE to check that the field has a value and raise an error if it is blank and there is a card number.
I've also seen companies modify the actual field element on the various screens to make it a required field, or possibly modify the screen flow to add an error to make the field required.
Unfortunately there isn't configuration option...

Has anyone made the CVV value for the payment card a required field, and if yes, in what user exits did you put the code?
