If your definition of SoD also includes integrity of the final accounts (and there are no other controls of accuracy in this area) then it could be considered SoD relevant.
We are comfortable with users creating and posting documents provided the other activities the user has access to doesn't break any SoD rules. To simplify things we have said the person who posts a transaction is responsible for the accuracy of what they are posting and therefore we are not concerned with who does the data entry (unless it also includes posting).
I would appreciate if you could let me know if there are any holes in this logic.
