Your requirement can be covered by using variable type "D" for dynamic variable.

To use a table with constants or dates defined in TVARVC table, you can use 'T" variable type.
It is also possible to create a program to change the values in this table. This program is run as the first job before the normal jobs run daily, weekly, etc - e.g., from/to dates of a pay period in the time evaluation job.

Subject: How toSet Up a Variant in Sq01 With Moving Dates

I wish to set up a variant where the dates change automatically to the next Sunday thru Saturday week. This query is already scheduled, but I want the variant to reflect the next week's period of time.

For instance - it runs each Monday morning and I want the query to reflect the previous Sunday thru Saturday dates.
