Louis is correct - Document Date defaults to the day the file is processed.
Take a look at OSS note 124655, specifically the section 5 paragraph. In the note, this refers to changing the Posting Date, but since it is suggesting using a User Exit, I believe it's worth looking into making it change Document Date instead, using similar logic.

Hello Gurus,
Need your help.
We are having issues on the behavior that we are having for the Posting Key documents related to the Bank statement line items.
The transaction is included in the batch with Statement date of 09/19/2014- it has value date of 09/19/2014 and posting date of 09/19/2014.
electronic statement was uploaded 09/20/2014- user did process it on 9/22/2014. the output of the sub processing has a posting date of 09/19/2014 and document date of 09/22/2014.
Need to know what is the basis of the document date for the Posting document? and where are we suppose to change the configuration for the document date.
