At the time of creating the vendor master, sort key attached 001 (Posting
date) & system pick the posting date auto, if no any data filed in
assignment field. No any sort key in the standard for check number.

What determines the value in the ZUONR (assignment) field is the Sort Key attached to the master record.
I suggest you look at the Sort Key assigned to the vendor.
