I know this thread is pretty old, but I reckon following should be a way.
READ TABLE itab WITH KEY guid = lv_guid ASSIGNING <field-symbol>.
IF <field-symbol> IS NOT INITIAL.
<field-symbol>-data = 'modified data'.
ENDIF.

actually, I think that FOR ALL ENTRIES only has a use for SELECT statements. A slight misunderstandig, I presume.
