In a sandbox client, play with 3 fields at the sales order item level (shipping tab) called:
-under delivery tolerance % = to control what you consider an acceptable % of the order quantity to ship to customer, so you do not end up with a small shipment only
-Maximum number of part?al deliveries = if you set this to one, then only one delivery will get created against this item
-Partial Delivery at Item Level = maybe you could set it to A
Those are the ones Stephen mentioned
All 3 of those fields, you could maintain on CMIR (VD51) for particular customer-material if you want or you could define on customer master Sales area Shipping tab to influence EVERY order for that sold-to or Ship-to
And as Phanikumar said, you will have to adjust sales order items to close/complete/reject/change the item with the remaining open quantity
Or you could also play with the item category configuration for "Completion Rule" = A
as that will consider the specific item category 'complete' on the first reference (when delivery is created against this sales order item)
