You should be able to overwrite it.
Go in your transaction
get the variant (Shift F5)
on the pop up screen(find variant) remove the name on the Created by field
now you should be able all the variant
then double click on the one t you want to overwrite
you are back on the main screen but the dynamic selection the small flag (red green blue)
you can see 1 active click on it
now you can see all the setting details
you can now change what you want
and save
on the next screen variant attribute save to overwrite the data
done

Some time ago, a consultant created a t code variant. Since he is not currently working with the company his user access was change to read only. Business Requirement changed, and I needed to update the variant. I found out, it was protected. How can I delete/update this variant?
