1. OA02 - create substitution for mass change
2. AR01 - create worklist
3. AR31 - execute worklist to apply substitution rule
Others may be able to provide more detail on how to use the above.
Personally, I have used a mass change tool called EzySolutions that allows record/playback of an SAP t-code and mass update via an Excel based template. There are other similar products - EzyScript or WinShuttle. You can also use LSMW.
