[sap-acct] In FI - AR/AP Historical Vendor/Customer Master Data

In FI (either AR or AP), lets say I have a customer / vendor "Bob" and I change his address, banking informaiton, payment terms or any other field in the Master Data, can I go back at a later time and see what his old information was?

It was my understanding that SAP Vendor/Customer Master Data is overwritten and historical information is lost but is this the case? If it is, then does the SAP Audit functionality capture any of the historical information in a change record somewhere so I can still see that "Bob's" info was XXXX and it was me that changed it to YYYY ?
