Hi There,
I believe you should have chosen advanced install instead of typical one, thus you could configure sapinst the way you wanted to. In SAP Guide is not described step by step installation, if useful to you.. You can execute sapinst over and over again in order to get enough experience setting configuration as long as you don't start installation after summary screen you should be fine.
Normally SAP Guides does not give step by step instructions.. You have to experience by yourself.

The snote 1094599 - Inst.NW 7.0 SR3/Business Suite 2005 SR3-UNIX/Oracle, refers the volume data in terms of gigabytes of each sapdata (1 to 4) (in section Pre-Installation - File requirements of Oracle sapdata file systems) but it does not have any information about why the system create not four but seven sapdata... and this is not the first time that happen!!
