[sap-log-mm] Change BOM Based On Inventory Levels Not Dates

I would to change a material number on an active BOM when the inventory for the current material number reaches zero in inventory. I essentially what to use up the old stock of a material number then switch to a new one. It would be best if MRP stops driving demand for the old item and drives demand for the new item.
It is difficult for me to know when the exact date for the change will happen so the “Valid To” and “Valid From” dates are difficult to use.
Any help would be great.
