It is possible to book interest during dunning, but only if you are using contract accounting. Only in this case it possible to book it. If you are using accounts recievable the interest is only printed on the dunning letter, but there are postings generated....

Hi

You may be aware that dunning is just a reminder, a form of
correspondence......which may include an interest element. As far as I
know, this interest which gets printed in the dunninng note is for
informative / report purposes only and does not carry any accounting
significance.

However, should you decide to bring interest into books of account, you may
use the node under Accounts Receivable > Periodic Processing > Interest
Calculation and even print interest forms, if required.

Please note that Interest calculation ( applicable not only for customers
but also for vendors and GL Accounts) has a detailed configuration
rigmarole before implementation.

Interest denoted in Dunning notes, as far as I know , is not for accounting
purposes.

Please do let me know if my view is incorrect.
Regards
