Hello Jerry,
Before answering, I would want to know why you want to do this. In other words, after creating a PO, what happens if the user needs to change any other field, like quantity, delivery complete, final invoice, etc...?
In any case, I can think of 2 directions - one would be, using SPRO - Define Screen Layout, make all the fields in all the screens Display, except for delivery date.
Another choice is to create a new (simple) transaction, where the user enters the PO and line number, and you display the delivery date, and allow him to update it via BAPI_PO_CHANGE.
