I am afraid Vidhya Dhar is right; substitution is not supported in document parking (I did not remember it, sorry).
Nevertheless, there is still a chance if you use SAP Business Workflow for parked documents:
IMG: Financial Accounting (New) > Financial Accounting Global Settings (New) > Document > Document Parking > Change Posting Date for Parking Documents.
