Let us look into the document change rule a bit more carefully.
You need to check if the Header Text field is left as not editable in
a. all company codes (may be there is a specific entry with special
reference to your company code only)
b. all account types (A, D , K, M and S)
c. special transactions class activated
If any one of the above leaves your header text not changeable, then the
field remains gray while changes are brought about to the document.
Try it out please
