Don't forget that the payment method can also be overridden in the payment proposal before the payment is processed.? You'll want to look at your authorizations and perhaps limit those who can change the proposal to prevent this further.

You can change the document change rule settings in SPRO. These settings are located here: Financial Accounting>Document>Rules for Changing Documents.
